Three Cheese Tortellini with Red Sauce
Going into the new year, I tend to start my resolutions the moment I think about them. “Meatless Mondays” is a decision that I want to start now and bring along with me into the new year. I am not a big meat eater as it is and I don’t consume red meat. So cooking with meat tends to get a bit boring when you’ve been eating chicken, turkey, and seafood back to back.
Three Cheese Tortellini is a delicious meal that you can customize into your own. There are other options of tortellini to choose from with different delicious stuffed flavors. You can make them in a white, butter or pesto sauce. You can even add meat to jazz it up a bit.
Three Cheese Tortellini w/ Red Sauce
Quick and delicious meal for a meatless monday!
Makes: 4 Servings
- 1 Packet of Tortellini Noodles
- 1 Jar of Red Sauce
- 1 Zucchini
- 1 Squash
- 2 Cloves of Garlic
- 1/2 Cup Of Chopped Onion
- Salt and Pepper to Taste
- Italian Season to Taste
- Parmesan Cheese
- Cook the Tortellini as instructed on packet.
- Chop Zucchini, Squash, Garlic, and Onion.
- In a medium sauce pan combine sauce, chopped veggies and seasonings. Cook on medium low for 25 minutes.
- Combine noodles and sauce. Top with parmesan cheese and enjoy!
If you want to make this dish outside of meatless monday you can add meat such as italian sausage, turkey sausage, chicken sausage, shrimp or chicken breast. The possibilities are endless! My boyfriend requested that I added Asiago Spinach Chicken Sausage to his portion.
