Stuffed Chicken Breast: Mozzarella and Spinach
So lately I have been trying to find new recipes to try out because I get tired of my typical weekly meals and I’m sure my family does as well. I came across this stuffed chicken recipe and thought this would be great over pasta. It was really easy to make and only required 3 ingredients and some seasoning.
Chicken Breast Sliced Thin
Frozen Chopped Spinach
Italian Seasoned Bread Crumbs
Seasoning: Cajun Seasoning , Black Pepper, Trader Joe’s Everyday Seasoning
Preheat your oven to 400 degrees. Start by cleaning your chicken. If you are using whole chicken breast you want to slice them in half for a thinner cut. In a pan brush olive oil to thinly coat both sides of the chicken. Season your chicken breast with your black pepper and everyday seasoning topping with a thin layer of bread crumbs on both sides. Once complete set your chicken to the side. Cut your mozzarella into small pieces. (I opted for 1cm thick slices cut into 4) In a bowl, mix the mozzarella , chopped spinach and Cajun seasoning until everything is nicely coated. Place a small spoon full of the cheese and spinach mix on one side of the chicken breast and roll/fold it closed sealing it together with a toothpick or two. Place your chicken breast in the oven for 30-40 minutes depending on gas or electric oven. While your chicken is cooking this is the time to make the sides. I choose to make linguine noodles with alfredo sauce and spinach . Once finished serve and enjoy!
